Ingredients
- 1 large celeriac
- 1/2 pound of butter
- 1/2 cup of almond flour
- 2 cloves of garlic, pressed
- 1 1/4 cup veal stock
- 1 tablespoon of Kitchen Bouquet sauce
- 2 tablespoon of tomato paste
- 1 teaspoon of balsamic vinegar
- Salt and pepper, to taste
- Cheese curds
- Sliced green onions (optional)
Instructions
Fries
- Peel and cut the celeriacs into strips.
- In a large pot, boil the celeriac for 5 minutes and drain.
- In a bowl, combine the celeriac with the paprika, salt and pepper.
- Over medium-high heat, in a large skillet, fry until golden brown.
Sauce
- In a pot, melt the butter, almond flour and garlic.
- Add the veal stock and the kitchen bouquet sauce. Boil for 2 minutes.
- Add the tomato paste, salt, pepper and balsamic vinegar.
- Whisk constantly and simmer for 5 minutes.
- Serve over the fries and add the cheese curds. Add green onions to taste.
